Pomegranate Salad

GRIDDLER

Recipe Ingredients:

1/2 C Walnuts

1 1/2  lb. Chicken Breast

3 Tbs. Extra Virgin Olive oil

1Tbs Olive oil for cooking chicken

1 Garlic Clove minced

10oz Baby Spinach

1 Pomegranate Seeded

Salt and fresh Ground black pepper

 

Directions;

Bake walnuts in oven for about 8 minutes at 275 degrees to remove moisture and flavor. Set aside to cool. Toss chicken with 1tbs olive oil amd season with salt and pepper, Grill chicken about 5 minutes on each side or until no longer pink depending on your pan/skillet heat setting. Slice chicken into half inch pieces and set aside to cool. Whisk together olive oil, vinegar, garlic in a  large bowl, then add spinach and walnuts toss to coat and garnish with pomegranate seeds.
